1/4 cup honey
1/2 cup chopped, unsalted pistachio nuts
4 scoops Neemo’s Saffron Silk ice cream
ground cinnamon
Place 1 tablespoon honey in each of the parfait glasses and sprinkle a small amount of the pistachios.
Put 1 scoop of the ice cream in each glass. Drizzle on 1 more tablespoon of the honey. Add more pistachios and sprinkle with cinnamon. Put a second scoop of the ice cream in each glass. Add pistachio nut on top and drizzle with more honey. Sprinkle tops with cinnamon. Garnish with a plain wafer cookie or cinnamon stick if desired.
