Karashi:
This is the hottest of all mustards, it is from Japan.
Uses: This is used in soy
dipping sauces and, in very small quatities, to accompany japanese
dishes.
Kaffir Lime Leaves:
Grown on Kaffir Lime
trees in Southeast Asia and Hawaii, the glossy dark green leaves, have a unique
double shape and look like two leaves that are joined end to end. They have
flora-citrus aromoa.
Uses: They are used in Asian and
Hawaiian cuisine. They can be found in Asian markets.
Kudzu:
A white starchy powder made from
the root of the kudzu plant. This is found in Japan and
Chima.
Uses: Used for thickening
soups, sauces and puddings.
