2 cup bread flour
2/3 cup milk
1/2 cup toasted chopped hazelnuts
1 egg
2 tblsp sugar
2 tblsp margarine or butter
4 tsp amaretto or hazelnut liqueur
3/4 tsp active dry yeast
1/2 tsp salt
1 recipe amaretto glaze
1 toasted chopped hazlenuts or
1 almonds (optional)
Amaretto Glaze:
1/2 cup sifted powdered sugar
1 tblsp amaretto or hazelnut liqueur or 1 tblsp almond extract
1 to 2 tablespoons milk if needed
Bread Directions: Add flour, milk, the nuts, egg, sugar, margarine or butter, liqueur, yeast, and salt to the bread machine according to the manufacturer's directions.
Bake and cool as directed. When bread is cool, drizzle with Amaretto Glaze.
Amaretto Glaze: In a small mixing bowl combine sugar, amaretto or hazelnut liqueur *OR* almond extract. If needed, add 1 to 2 teaspoons milk to make of drizzling consistency.
Bread Machine Basics: These helpful tips apply to all types of bread machines: Bread flour, which is high in protein, works best for breads made in a bread machine. You can use
other grains or flours with the bread flour but not in place of all of it. Some recipes also call for a small amount of gluten flour. This helps breads, especially those made with
low-gluten flours (such as whole wheat flour), hold together.
Add ingredients to the bread machine in the order specified by the directions in the owner's manual.
To use powdered milk instead of fresh, add 1/3 cup nonfat dry milk powder for each 1 cup of water and add it with the flour. Always use powdered milk when using the timer on your machine.
Bread Machine Cornmeal Bread
Medium Loaf:
1 cup water
1/4 cup vegetable oil
1 egg
2 tablespoon sugar
1 teaspoon salt
1 cup yellow cornmeal
2 cup bread flour
1 1/2 teaspoon yeast
Use the basic setting according to your machine manufacturer. This loaf rises very high and is suprisingly good.
Bread Machine Best Ever Pizza Crust
3/4 cup water; 80-90° f.
2 tablespoon veg oil
2 cup all purpose or bread flour
1/2 teaspoon sugar
1/2 teaspoon salt
2 teaspoon active dry yeast or 1 1/2 teaspoon bread machine yeast
8 oz pizza sauce;
1 your favorite pizza toppings
1 mozz cheese; (as much as you like)
Directions:
1 Add water and veg. oil to pan
2 add flour, sugar, and salt to pan. Tap pan to settle dry ingredients, then level ingredients, pushing some of the mixture into corners, to cover water.
3 make a well in center of dry ingredients; add yeast. Lock pan into bread maker.
4 Program for dough. Program time delay if being used. Start bread maker. When done, remove pan from bread maker. Place dough onto floured surface. Knesd 1 min., then let rest 15 mins.
5 Roll dough out to fit 12-14 inch pizza pan. Place dough onto greaged pan* which has been sprinkled with cornmeal. Press dough into pan, forming an edge. Let rise in warm draft free place for 20-25 mins.
6 Spread pizza sauce evenly over crust, then top with cheese and favorite toppings. bake in preheated424 degree F oven for 20-25 mins or until nicely browned on top. Let rest 5 mins and enjoy!
Bread Machine Challah
2 large eggs
5/8 cup water; tepid
1 1/2 tablespoon oil; corn or - other bland oil
1/2 teaspoon salt
4 1/2 tablespoon sugar
3 cup bread flour
2 1/4 teaspoon yeast; rapid-rise
Add to machine in the manufacturers prefered order Select dough mode. Remove when first rise is finished and punch down on a floured surface (dough is slightly sticky and very puffy). After resting for a few minutes, divide into thirds, roll into ropes and braid. Let rise until almost
doubled in a warm place, about 45 minutes. I braid the loaf and place on a slightly oiled cookie baking sheet to rise. Bake in a pre-heated 350° F oven for 25 minutes (approx). You can give it an egg wash, but I find the loaves get nicely brown without it.
Bread Machine White Bread
1 medium loaf
1 1/2 tsp. yeast
2 1/2 tbsp. nonfat dry milk
2 c. bread flour
2/3 tsp. salt
1 tbsp. sugar
1 sm. egg (opt.)
2 1/2 tbsp. softened margarine or oil
2/3 c. warm water
Put ingredients into bread baker in order given. Ingredients should be at room temperature. Choose setting on automated bread machine and in about 2 hours enjoy fresh bread. Amount of time varies with
the make of machines.
